Abstract

A l'issue d'une série de recherches, il apparaît que l'évolution de la filière « bovins et viande bovine » au cours de la période 1960-1980, doit surtout s'interpréter comme le résultat du mouvement d'intensification et de spécialisation de l'élevage, les nouveaux besoins d'échanges ayant généré de nouveaux types d'agents. Cependant, les formes de production et d'échanges restent multiples ; et il existe, au sein de la filière, bien d'autres clivages que la traditionnelle opposition « marchands-coopératives », réelle sans doute, mais trop simpliste. Demain, la filière devrait tirer son efficacité du caractère composite des structures d'entreprise, aux potentialités complémentaires.
