Objective: In this study, the biodegradation capacity of Lactiplantibacillus plantarum (OR252329.1), a selected probiotic microorganism, on biogenic amines was investigated, and its potential use in food safety was evaluated. Method: Media containing histamine, spermine, cadaverine, and β-phenylethylamine were prepared and incubated with the probiotic strain. The degradation levels of the biogenic amines were analyzed using high-performance liquid chromatography (HPLC). In addition, the numerical increase of the degrading microorganisms was determined using cultural methods. Results: As a result of the experiments, L. plantarum completely degraded histamine within 60 hours and spermine by the 4th day. While cadaverine decreased by approximately 90% on the 7th day, β-phenylethylamine levels were reduced by more than 60%, demonstrating significant degradation activity. Conclusion: The findings of this study revealed that the tested probiotic bacterium has the potential to naturally detoxify biogenic amines. When integrated into fermentation systems, it can contribute to food safety by improving microbial quality.
