La escritura condimentada de oralidad en el primer libro malagueño de cocina (siglo XIX)

Abstract

En 1867 Guillermo Moyano, cocinero durante algún tiempo de los Marqueses de la Casa-Loring, publicó un recetario de cocina titulado El cocinero español y la perfecta cocinera instruidos en lo mejor del arte culinario de otros países, que puede considerarse como el primer libro de tema culinario editado en Málaga. Las casi trescientas páginas que integran la obra reflejan un uso muy correcto de la lengua escrita, salpicado con algunas peculiaridades de la lengua hablada, de la oralidad, que dotan al libro de una gran viveza. Estos rasgos nos han animado a acercarnos a esta obra casi desconocida desde una perspectiva lingüística, con el propósito de analizar un conjunto de elementos fonéticos, morfológicos y, sobre todo, léxicos que se insertan en el discurso escrito y dan forma a todo un catálogo de recetas y técnicas culinarias aderezadas con elementos del andaluz malagueño hablado en la segunda mitad del siglo XIX.
