Development and Optimization of Cactus Pear Fruit Jelly Supplemented with Moringa Oliefera Leaf Extract

Abstract

Les fruits de poire de cactus et le Moringa (Moringa oleifera Lam) sont des sources de nourriture abondantes sur le plan nutritionnel. Cette étude a été menée pour évaluer le potentiel du poirier de cactus pour le développement de la gelée avec la supplémentation en extrait de feuilles de M. oleifera comme moyen de perte post-récolte, d'insécurité alimentaire et de réduction de la malnutrition. La conception du mélange D-optimal dans le logiciel statistique Minitab Version 16 a été utilisée pour générer dix séries expérimentales (formulations pour le développement de la gelée) utilisant 60 à 80 % de jus de cactus (CFJ), 0 à 20 % d'extrait de M. oleifera (MOE) et 20 à 40 % de sucre de table (TS). Les gelées développées ont été analysées pour la composition proche, la teneur en minéraux (Fe, Ca et Zn) et l'évaluation sensorielle. L'optimisation nutritionnelle et sensorielle a été réalisée à travers une approche graphique utilisant une conception de mélange D-optimal. Les résultats ont indiqué une différence significative dans les protéines, les graisses, les fibres, les cendres, les glucides, l'énergie, le fer, le calcium, le zinc, l'apparence, l'arôme et le goût parmi les gelées formulées (p < 0,05). En revanche, la différence significative n'a pas été observée dans la sensation en bouche et l'acceptabilité globale parmi les gelées. Les attributs nutritionnels et sensoriels optimaux globaux de la gelée ont été trouvés dans une gamme de CFJ (70-73%), MoE (3-14%) et TS (20-26%). Cependant, il a été prédit que le développement de la gelée avec la formulation de CFJ (68 %), MOE (12 %) et TS (20 %) donnerait la valeur nutritionnelle et le score d'acceptabilité sensorielle les plus élevés. Le résultat optimisé indiquait que la gelée contiendrait 3,97 % de protéines, 0,92 % de matières grasses, 1,09 % de fibres, 1,19 % de cendres, 62,95 % de glucides, 275,97 kcal/100 g d'énergie, 98,45 mg/100 g de calcium, 0,25 mg/100 g de zinc, 7,43 mg/100 g de fer et un score global d'acceptabilité sensorielle de 4,38 sur une échelle hédonique à cinq points.

La fruta de pera de cactus y la moringa (Moringa oleifera Lam) son fuentes de alimentos nutricionalmente abundantes. Este estudio se realizó para evaluar el potencial de la fruta de pera de cactus para el desarrollo de gelatina con la suplementación de extracto de hojas de M. oleifera como medio de pérdida poscosecha, inseguridad alimentaria y reducción de la desnutrición. El diseño de la mezcla óptima D en el software estadístico Minitab versión 16 se utilizó para generar diez corridas experimentales (formulaciones para el desarrollo de gelatina) utilizando 60-80% de jugo de fruta de cactus (CFJ), 0-20% de extracto de M. oleifera (Moe) y 20-40% de azúcar de mesa (TS). Las gelatinas desarrolladas se analizaron para determinar la composición próxima, el contenido mineral (Fe, Ca y Zn) y la evaluación sensorial. La optimización nutricional y sensorial se llevó a cabo a través de un enfoque gráfico utilizando un diseño de mezcla D-óptimo. Los resultados indicaron una diferencia significativa en proteínas, grasas, fibra, cenizas, carbohidratos, energía, hierro, calcio, zinc, apariencia, aroma y sabor entre las gelatinas formuladas (p < 0.05). Por el contrario, no se observó una diferencia significativa en la sensación en la boca y la aceptabilidad general entre las jaleas. Los atributos nutricionales y sensoriales óptimos generales de la gelatina se encontraron en un rango de CFJ (70-73%), MOE (3-14%) y TS (20-26%). Sin embargo, se predijo que el desarrollo de gelatina con la formulación de CFJ (68 %), MOE (12%) y TS (20%) proporcionaría el mayor valor nutricional y puntaje de aceptabilidad sensorial. Cactus pear fruit and Moringa (Moringa oleifera Lam) are nutritionally abundant food sources. This study was conducted to evaluate the potential of cactus pear fruit for jelly development with the supplementation of M. oleifera leaves extract as means of postharvest loss, food insecurity and malnutrition reduction. D-optimal mixture design in Minitab Version 16 Statistical Software was used to generate ten experimental runs (formulations for jelly development) using 60-80% cactus fruit juice (CFJ), 0-20% M. oleifera extract (MOE), and 20-40% table sugar (TS). The developed jellies were analyzed for proximate composition, mineral content (Fe, Ca and Zn) and sensory evaluation. Nutritional and sensorial optimization was carried through a graphical approach using a D-optimal mixture design. The results indicated a significant difference in protein, fat, fibre, ash, carbohydrate, energy, iron, calcium, zinc, appearance, aroma, and taste amongst the formulated jellies (p < 0.05). In contrast, the significant difference was not observed in mouth feel and overall acceptability amongst the jellies. The overall optimum nutritional and sensorial attributes of the jelly were found in a range of CFJ (70-73%), MOE (3-14%) and TS (20-26%). However, developing jelly with the formulation of CFJ (68 %), MOE (12%) and TS (20%) was predicted to give the highest nutritional value and sensory acceptability score. The optimized result indicated the jelly would contain 3.97% protein, 0.92% fat, 1.09% fiber, 1.19% ash, 62.95% carbohydrate, 275.97 kcal/100 g energy, 98.45 mg/100 g calcium, 0.25 mg/100 g zinc, 7.43 mg/100 g iron and overall sensory acceptability score of 4.38 in five-point hedonic scale.
