Adaptación de variedades blancas de vid (vitis vinifera l.) En Castilla-La Mancha

Abstract

En una región vitícola como Castilla-La Mancha, en la que predomina una variedad blanca autóctona como Airén y con excedentes estructurales de vino, resulta muy interesante realizar estudios previos tendentes a la diversificación varietal del viñedo. Además de introducir variedades tintas de indudable interés, se estudia en este trabajo el cultivo de variedades blancas extranjeros (4) y se comparan con otras variedades autóctonas (hasta un total de 12), que puedan aportar caracteres mejorantes. El estudio se realiza en una plantación de 15 años, en espaldera, con riego y durante 2 años consecutivos. Se estudian aspectos tan diversos como la fenología (fecha de brotación, floración, envero y maduración), la fertilidad (racimos por yema, tamaño de la baya y del racimo), el rendimiento (en kg/cepa de uva y de madera), componentes del mosto y del vino (azúcares, acidez total, ácidos orgánicos, potasio y extracto seco) y datos de análisis organoléptico por el método del perfil. Después de el Análisis de Componentes Principales aparecen grupos de variedades que nos pueden mostrar el camino para la mejora de los vinos blancos en Castilla-La Mancha: aparece un grupo formado por variedades de ciclo tardío, productivas, de racimo grande y poco aromáticas; hay otro en el que se encuentran variedades no muy productivas, de desarrollo temprano, racimo y bayas pequeñas y más aromáticas.
