Industria lechera en méxico: parámetros de la producción de leche y abasto del mercado interno

Abstract

Desde el inicio de los anos noventa, la produccion de leche en Mexico crecio a una tasa media anual de 1.3%, ocupando el lugar dieciseis en la produccion mundial del lacteo, con un 3% del total. De acuerdo con SIAP-SAGARPA (2014), la produccion de leche de bovino en 2014 fue de 11,108.4 millones de litros, con valor de 62,000 millones de pesos. Sin embargo, la produccion interna solo contribuye a satisfacer el 80% del consumo nacional, razon por la cual Mexico ocupa el primer lugar mundial en importaciones de leche en polvo, con un 9% del total. El objetivo de esta investigacion es analizar la situacion de la industria lechera nacional, mediante la identificacion y comparacion de los parametros de la produccion registrados, para tener la referencia de que hacer para aumentar la productividad y satisfacer la demanda interna, tanto de la industria lechera asi como de la poblacion. Se concluyo que la brecha entre produccion y demanda interna del lacteo brinda la oportunidad para aumentar la produccion en el pais y sustituir importaciones. Aprovecharla, implica fortalecer la cadena agroindustrial y mejorar los parametros de la produccion nacional, ya que a nivel mundial Mexico supero en 2014 solo a Brasil e India en productividad, con apenas 1.8 toneladas producidas por cabeza anualmente, parametro muy por abajo de las 9.93 toneladas producidas por cabeza en Estados Unidos de Norteamerica, a quien le compramos 9 de cada 10 toneladas que importamos, y tambien muy abajo de las 9.48 toneladas en Japon y 8.85 en Canada.
