Abstract

Objetivos. Analizar la aceptación y preferencia de un snack extruido a partir de kiwicha (Amaranthus caudatus) y arroz (Oryza sativa L.). Materiales y métodos. Se analizó sensorialmente muestras del snack en dos presentaciones, con cobertura y sin cobertura. Se realizaron pruebas de preferencia y aceptabilidad con 30 consumidores, pertenecientes a la población de Chimbote-Perú. Se aplicó la prueba de selección y la prueba hedónica de 9 puntos en la que se calificó atributos como olor, color, apariencia general, sabor y crocancia. Los datos se analizaron por la distribución de Chi-Cuadrado. Resultados. Se prefirió el snack con cobertura (53.3%), no existiendo diferencia significativa en el atributo de olor, apariencia general y crocancia, mientras que en el color y sabor, existió diferencia significativa. Conclusiones. Se analizó y se determinó la aceptación y preferencia del snack extruido a partir de kiwicha (Amaranthus caudatus) y arroz (Oryza sativa L.)
