Rheological behavior of concentrated tucupi

Abstract

O Tucupi, que e muito apreciado na regiao Norte do Brasil, e um liquido fermentado derivado da mandioca ( Manihot esculenta Crantz) e foi levado para o exterior por suas caracteristicas exoticas. Este estudo teve como objetivo avaliar o comportamento reologico do tucupi com 30, 35 e 40% de solidos e concentrar a 50, 70 e 90 ° C. Os dados reologicos foram obtidos a 25, 40, 60 e 80 ° C com taxas de cisalhamento crescentes e decrescentes. A reologia a 25 ° C indicou que a gelificacao parcial do amido durante a concentracao provoca uma diminuicao na viscosidade do produto e, se a concentracao for realizada a uma temperatura que favoreca a gelificacao total do amido, a viscosidade do produto aumenta. O tucupi concentrado comportou-se como um liquido pseudoplastico, mas a 60 e 80 ° C com taxas crescentes de cisalhamento, o produto se comportou como um fluido dilatante. A histerese foi observada em curvas de fluxo a partir de 40 ° C, que caracterizam o concentrado de tucupi como fluido reopetico. O modelo de Ostwald-de Waele previu as curvas de fluxo do produto e uma equacao semelhante a de Arrhenius descreveu a dependencia da temperatura na viscosidade aparente para os dados reologicos obtidos com taxas crescentes de cisalhamento. Os valores de energia de ativacao do produto (E a ) variaram de 16,86 a 25,23 kJ / mol em funcao da concentracao.
