Innovaciones en el procesado de alimentos: Tecnologías no térmicas

Abstract

La creciente demanda del consumidor de alimentos mínimamente procesados está impulsando el desarrollo de nuevos métodos de conservación. Procesos no térmicos (como alta presión hidrostática, ultrasonidos, irradiación, campos eléctricos de alta intensidad, campos magnéticos oscilantes y destellos de luz blanca) pueden utilizarse con este objetivo sin que se vea afectada la calidad de los alimentos. Aunque la eficacia de estos métodos se conoce desde hace tiempo, es ahora cuando se esta produciendo los mayores avances tecnológicos para hacer posible su comercialización.
