Le cuisinier gascon (1740: a fascimile reprint by Daniel Morcrette, Luzarches, was done in 1976) is a book of great interest about which little comment has been published so far. Barbara Wheaton, in her new book Savoring the Past (reviewed on page 62) provides such comment, which we reproduce here as a supplement to our review and an amuse-gueule for those who contemplate buying the book.
