Abstract

Introducción: La fermentación del cacao es una etapa determinante para desarrollar compuestos precursores de aroma, sabor y características funcionales en el grano. La incorporación de microorganismos seleccionados y extractos frutales puede potenciar la calidad sensorial y el valor funcional del producto final. Objetivos: Evaluar el efecto de Saccharomyces cerevisiae y extracto de mango Manila sobre las propiedades fisicoquímicas y sensoriales del cacao variedad CCN-51) en dos estados de madurez. Material y Métodos: Se aplicó un diseño completamente al azar trifactorial con dos grados de madurez (sazona y madura), tres niveles de levadura (0%, 0,5% y 1%) y dos niveles de extracto de mango (0% y 3%), totalizando doce tratamientos con dos repeticiones. Se evaluaron pH, sólidos solubles, temperatura, acidez titulable, alcalinidad de cenizas, humedad, prueba de corte, atributos sensoriales y capacidad antioxidante. El análisis estadístico se realizó mediante ANOVA y prueba de Tukey (α = 0,05). Resultados: El tratamiento con cacao maduro, 1% de levadura y 3% de extracto presentó el mayor pH (5,00; p = 0,0111), reducción de °Brix del 72% (21,5 a 6,0; p = 0,0385) y mejores calificaciones sensoriales (sabor 8,2/9; textura 8,5/9; p < 0,05). En la prueba de corte, alcanzó 86% de granos bien fermentados, un 58% más que el control (54,6%; p < 0,05). La acidez titulable disminuyó un 66% (0,32% vs. 0,93%; p < 0,0001). La capacidad antioxidante, aunque 38% menor que el control, se mantuvo funcional (355,95 µmol Trolox/g; p < 0,05). Discusión: La sinergia entre madurez fisiológica, levadura y extracto frutal favoreció la cinética fermentativa, mejoró la calidad física y sensorial, y conservó la funcionalidad bioactiva del grano, sin afectar su estabilidad poscosecha.
