Abstract

espanolLa alta fluctuacion de los precios de las materias primas utilizadas en la alimentacion animal ha origi-nado un mayor interes por la formulacion de dietas alternativas al cereal. De hecho, el empleo de tu-berculos como el boniato (Ipomoea batatas L.) se presenta como una excelente fuente de carbohidra-tos. En este estudio se evalua el efecto que la inclusion de boniato (30 %) en la dieta de cerdos en fasede cebo tiene sobre la calidad de la carne. En las muestras se evaluaron parametros fisicoquimicos comoel pH, el color, la composicion quimica, la capacidad de retencion de agua y la textura, y la calidad nu-tricional a traves del perfil de acidos grasos. No se observaron diferencias significativas en los parame-tros estudiados excepto para el contenido en proteina (P EnglishThe high fluctuation of the prices of raw materials used in animal feed has led to a greater interest inthe formulation of alternative diets to the cereal. In fact, the use of tubers such as sweet potato (Ipo-moea batatas L.) is presented an excellent source of carbohydrates.
