Consumer Acceptance of Low Alcohol Wines

Abstract

La consommation du vin dans les pays où elle est traditionnelle diminue régulièrement. Les études montrent que l'alcool est une raison de cette désaffection. Entreprises et chercheurs tentent de trouver des solutions dans l'allégement en alcool du vin. La question est de savoir si conceptuellement, un vin allégé en alcool peut être accepté par une partie des consommateurs. Cet article présente et discute un modèle d'acceptabilité, faisant intervenir des variables comme les attributs perçus du vin, l'implication des consommateurs pour le vin en général, l'innovativité personnelle, la familiarité avec le vin et les produits allégés en général. L'auteur conclut que l'acceptation est très liée à la perception du goût et que ce type de produit devrait tirer sa légitimité de sa compatibilité avec la classe des vins pour être acceptable.
