Abstract

Compte tenu de la diversite du regime alimentaire des Chinois, il peut paraitre etonnant qu'ils aient porte si peu d'interet au lait. Des sources anciennes attestant que le lait d'animaux domestiques ne leur etait pas inconnu, deux interrogations intrigantes se posent : 1. Pourquoi les anciens Chinois n'ont-ils pas developpe l'elevage laitier ? 2. Pourquoi n'ont-ils pas adopte le lait comme ressource alimentaire une fois que la valeur nutritionnelle des produits laitiers fut demontree par leurs voisins nomades septentrionaux ?
