
Abstract This chapter provides an overview of recent research on the effects of genotype fruit development and growing conditions on the synthesis and concentrations of the following metabolites in pepper (Capsicum spp.): antioxidants, carotenoids, phenolic compounds, capsaicinoids, flavonoids and vitamin C.
