Abstract This chapter discusses the history of chilli (Capsicum species) utilization by man, presenting archaeobotanical evidence for the exploitation of these plants in the ancient Neotropics. A discussion of some of the uses of chilli in modern times is included, and an explanatory model for why chillies hold such an important place in the human diet is presented.
