AbstractCastor meals treated with Ca(OH)2 to reduce their allergen content have been re‐evaluated using a more sensitive biological assay procedure. Results indicate that treatment with 4% lime at 120 C for 15 min should produce optimal deallergenization. Amino acid analysis of treated products shows that steam and lime deallergenization procedures tend to destroy more labile amino acids than ammonia treatment does.
