Zur quantitativen Bestimmung der Dipeptide Anserin, Balenin und Carnosin in Fertigsuppen-Erzeugnissen

Abstract

Es wird ein Verfahren zur getrennten Bestimmung der Dipeptide Anserin, Balenin und Carnosin in Fleischextrakten und Fertigsuppen-Erzeugnissen beschrieben. Dabei werden die entsprechenden DNP-Derivate unter Ausnutzung unterschiedlicher Polaritat bzw. geringer Abweichungen der Basizitat am Imidazoring chromatographisch getrennt und die Flecken direkt auf der Dunnschichtplatte remissions-spektralphotometrisch ausgewertet. Durch Vortrennung auf Ionenaustauschern konnen auch geringe Mengen der Peptide aus Fertigsuppen-Erzeugnissen aller Art angereichert werden, wobei bisher in Verdunnung bis 1:800 gearbeitet wurde. Der mittlere Fehler lag bei solchen Bestimmungen in der Regel unter ± 2–3%.
