The aim of mutation breeding as far as seed storage substances are concerned consists in developing varieties of good nutritional quality. For energy supply in the body, carbohydrates, fats, and proteins are exchangeable. The special importance of proteins, however, lies in supplying amino acids; thus, they cannot be replaced by other substances. As proteins of various sources are differently composed, their nutritional value varies. Animal proteins are rich in essential and sulfur-containing amino acids, the amount of which is considerably smaller in seed proteins.
