
Controlled atmosphere storage was developed commercially almost a century ago as a supplement to refrigeration, particularly to extend the season of availability of apples. Since then, it has been increasingly used and applied to many fruit and vegetables. The principles that underpin the technology are increasingly understood and the technology has been refined to make it more effective and applicable to different situations. Some of the achievements and challenges that need to be addressed are considered and evaluated in terms of its continuous evolution.
