There is a substantial amount of published information on the storage conditions of food during its self-life. Most of this information concerns the products under the responsibility of the producer, the processor, the distributor, the wholesaler or the retailer. There is comparatively little information on what happens following purchase by the consumer from a supermarket until storage in a domestic refrigerator or the effect of the storage conditions on food quality.
