Mikotoksini iz edamskog sira i njihova toksičnost

Abstract

U toku ovog rada ispitana je zastupljenost plesni, prisustvo ajlatoksina B1 i ohratoksina A u uzorcima edamskog sira, kao i toksičnost ekstrakata uzoraka pljesnivog sira. Utvrđeno je da su svi uzorci sira bili pljesnivi. Iz tih uzoraka izoliran je veliki broj plijesni, koje su svrstane u 6 rodova i 19 vrsta. Penicillium camemberti i P. verrucosum var. cyclopium predstavljali su najčešće izolirane kontaminante. Ni jedan uzorak sira nije bio kontaminiran aflatoksinom B1, dok je ohratoksin A utvrđen u dva uzorka u koncentracijama od 820 i 1100 μg/kg. Svi ekstrakti sira bili su manje ili više toksični za embrione pilića, a 40 % ekstrakata izazvalo je smrtnost tretiranih embriona već u toku prvog dana ogleda. Sveg-a 9,33 % embriona preživjelo je ogled.

All the samples of Edam, cheese collected from the market were contaminated by moulds. A great number of moulds from these samples were isolated. The moulds were classified into 6 genus and 19 species. Aflatoxin B1 was not detected in cheese samples, while ochratoxin A was found in two samples at the concentration level from 820 to 1100 μg/kg. All the exstracts of contaminated cheese were toxic for chicken embryons. During the first test day the letal effect on embryons was shown by 40 % of total number of extracts. Only 9,33 % of embryons survived the treatment.
