Abstract

В настоящее время наиболее перспективным является научное обоснование качества и безопасности копченых рыбных продуктов на всех этапах их жизненного цикла. Отсутствие единого методологического подхода формирования квалиметрической модели качества является большим барьером в обеспечении качества и безопасности копченых рыбных продуктов. Для обеспечения высокого качества копченых рыбных продуктов сформирована квалиметрическая модель качества и безопасности копченых рыбных продуктов на основе методологии структурирования функции качества.

Currently, the most promising is the scientific basis of quality and safety of smoked fish products at all stages of its life cycle. Absence of a common methodological approach forming qualimetric quality model is smiling big barrier to ensure the quality and safety of smoked fish products. To ensure high quality smoked fish products from aquatic formed qualimetric model quality and safety of aquatic products smoked based on the methodology of structuring the quality function.
