Abstract

In the meat obtained from a stress-resistant sows only in the first two play-изводительных cycle higher protein content, tryptophan, BCP, monoand полиненасы-saturated fatty acids, the ratio of polyunsaturated fatty acids to saturated than in pork from a stress-sensitive animals, which testified to a high-coy its food value. After the third of the reproductive cycle, in pork stress-resistant sows was more intensive fall in the content of protein, tryptophan, phospholipids, BCP, and increased the content of monounsaturated, polyunsaturated fatty acids, the amount of unsaturated fatty acids, the ratio of polyunsaturated fatty acids to saturated than in meat fit the lower yielding individuals that stipulated the lower its nutritional value.
