Способ повышения эколого-пищевых качеств молока и молочных продуктов

Abstract

Целью проведенных исследований было изучение физико-химических и технологических свойств молока коров при добавках препаратов витамина С и эпофена в рационы с повышенным фоном нитратов. При этом было установлено, что указанные препараты обладают высокими денитрификационными свойствами на молочную продукцию, которую целесообразно перерабатывать на производство осетинского сыра.

The aim of the research has been to study the physical, chemical and technological properties of milk cows when adding supplements of vitamin C and Epofen in diets with high nitrate background. It has been found that these drugs have a high denitrification effect on dairy products, which consequently should be processed for the Ossetian cheese.
