Скрининг нитрофурановых соединений в импортном мясном сырье

Abstract

В статье приведены результаты скрининговых исследований по количественному определению нитрофурановых препаратов в импортном мясном сырье (мясо индейки, говядина, свинина, телятина, баранина, мясо курицы). Содержание нитрофуранов определяли по детекции их метаболитов: 1-аминогидантоина (АГД), 3-амино-2-оксазолидинона (AO3) и 3-амино-5-морфолинометил-2-оксазолидинона (AMO3). Проанализированы положительные и отрицательные эффекты нитрофурановых препаратов. Рассмотрены данные, касающиеся установления потенциальных рисков для здоровья человека при использовании загрязненного метаболитами нитрофуранов мясного сырья. Эти препараты запрещены в животноводстве в странах Европы с 1995 г. в связи с неблагоприятным воздействием (канцерогенным, мутагенным, тератогенным и токсическим) на организм животных и потенциальным риском для человека. В РФ в соответствии с СанПиН 2.3.2.1078-01 с 01.01.2012 впервые введено нормирование нитрофуранов (включая фуразолидон).

The article presents the results of screening studies of quantification of the nitrofuran drugs imported in raw meat (turkey, beef, pork, veal, lamb, chicken). Identification was carried out by the detection of such nitrofurans metabolites as: 1 aminogidantoin (AGD), 3-amino-2-oxazolidinone (AOZ) and 3-amino-5-morphohnomethyl-2-oxazolidinone (AMOZ). There are anatyzed the positive and negative effects of nitrofuran drugs. The data for the establishment of the potential risks to human health when using contaminated raw meat metabolites of nitrofurans are discussed. These drugs are prohibited in livestock in Europe since 1995 due to the adverse effects (carcinogenic, mutagenic, teratogenic and oic) on animals and the potential risk to humans. In the Russian Federation in accordance with SanPin 2.3.2.1078-01 01.01.2012 for the first time thewas introduced rationing for nitrofurans (including furazolidone).
