Научные и методологические подходы к управлению качеством пищевых продуктов

Abstract

Предложена научная концепция развития теории управления качеством пищевых продуктов. Заложено создание систем прослеживаемости от производства сельскохозяйственного сырья до реализации готового продукта, квалиметрического прогнозирования показателей качества продукции с учетом потребительских предпочтений, анализа и учета возможности возникновения различных технологических риᑁков и многоуровневого проектирования функции качества. Рассмотрены три инновационные составляющие: внедрение на производстве «Системы менеджмента безопасности пищевой продукции» на базе МС ИСО 22000:2005, использование разработанной нами квалиметрической модели прогнозирования показателей качества при проектировании новых конкурентоспособных продуктов, внедрение «Системы управления качеством» на основе МС ИСО 9001:2008 и системы прослеживаемости от производства сельскохозяйственного сырья до реализации готового продукта в торговой сети.

A scientific development concept of food product quality is laid for creation of traceability systems from producing agriculture raw materials to the finished product realization, qualimetric forecasting of the product quality indices, taking into account customer preferences, the possibility of different technological risks, multilevel projecting of the quality function. Three innovative constituents are considered: the introduction of food product safety management systems in the production process based on MS ISO 22000:2005; the use of the developed qualimetric model forecasting quality indices in projecting new competitive products; the introduction of quality management systems based on MS ISO 9001:2008 and traceability system.
