Разработка вакуум-сублимационных сушилок с использованием термоэлектрических модулей

Abstract

Выявлены основные направления использования сублимированных продуктов и ингредиентов. Приведен анализ рынков сбыта сублимированных продуктов. Показано, что внедрение инновационных технологий производства позволит динамично развиваться не только крупным компаниям, но и мелким фирмам, что создаст предпосылки для роста российского рынка сублимированных продуктов. Проанализированы тенденции развития сублимационного сушильного оборудования. Обоснована актуальность разработки энергосберегающих вакуум-сублимационных сушилок. Комплексный подход к созданию конкурентоспособных отечественных технологий и оборудования для сублимационного обезвоживания термолабильных продуктов заключается в использовании эффективных комбинированных средств энергоподвода, интенсификации процесса, уменьшении удельных энергозатрат и, как следствие, снижении себестоимости продукции при достижении высоких качественных показателей. Приведены преимущества термоэлектрических модулей как альтернативного направления существующему парокомпрессионному и абсорбционному холодильному оборудованию. Проведены исследования процесса вакуум-сублимационного обезвоживания с использованием термоэлектрических модулей. Научно подтверждено, что термоэлектрический модуль, работающий на эффекте Пельтье, способствует увеличению холодопроизводительности за счет использования принципа теплового насоса. Предложены варианты использования термоэлектрических модулей в конструкциях сушилок. Определены оптимальные режимы работы и количество модулей в секции. Указаны пути повышения энергетической эффективности вакуум-сублимационных сушилок с использованием термоэлектрических модулей. Полученные результаты позволят производить инженерные расчеты и проектирование прогрессивных вакуум-сублимационных установок с различными способами энергоподвода.

The main directions of use of freeze-dryed products and ingredients are revealed. The analysis of sales markets of freeze-dryed products is provided. It is shown that introduction of innovative production technologies will allow to develop dynamically not only to the large companies, but also small firms that will create prerequisites for growth of the Russian market of freeze-dryed products. Tendencies of development of the freeze-drying equipment are analysed. Relevance of development of energy saving freeze-dryers is proved The integrated approach to creation of competitive domestic technologies and the equipment for sublimation dehydration of thermolabile products consists in use of the effective combined remedies of a power supply, a process intensification, reduction of specific energy consumption and, as a result, decrease in product cost at achievement of high quality indicators. Advantages of thermoelectric modules as alternative direction to existing vapor-compression and absorbing refrigerating appliances are given. Researches of process of freeze-drying dehydration with use of thermoelectric modules are conducted. It is scientifically confirmed, that the thermoelectric module working at Peltier effect, promotes increase in refrigerating capacity due to use of the principle of the thermal pump. Options of use of thermoelectric modules in designs of dryers are offered. Optimum operating modes and number of modules in section are defined. Ways of increase of power efficiency of freeze-dryers with use of thermoelectric modules are specified. The received results will allow to make engineering calculations and design of progressive freeze-drying installations with various ways of a power supply.
