Гигиеническая оценка липидного компонента в структуре питания студенческой молодежи

Abstract

The actual nutrition of the Omsk University students aged 18-27 years, was studied with the use of the method of the analysis of the frequency of food consumption. There is done quantitative assessment of nutrient consumption related to the fat component of food. There is described the qualitative composition of lipids and its effect on indices of the nutritional status assessed with the use of somatometric, bioelectric impedance and laboratory methods. The nutrition of students is established to be irrational, unbalanced on the lipid component and creates conditions for the formation of diseases with alimentary dietary risk factors. Traditional indices of nutritional status (BMI, W/HR) at this are within the boundaries of normal values, but the composition of the body under the influence of an excess of animal fats with a deficiency of essential polyunsaturated fatty acids is altering that can be diagnosed with the aid of bioimpedance measuring method. There are established correlation relations between the parameters of consumption of dietary lipids and indices of the nutritional status in young adults.

Изучено фактическое питание студентов вузов Омска в возрасте 18-27 лет методом анализа частоты потребления пищи. Дана количественная оценка потребления нутриентов, относящихся к жировому компоненту пищи. Описаны качественный состав липидов и его влияние на показатели пищевого статуса, оцененные с использованием соматометрического, биоимпедансного и лабораторного методов. Установлено, что питание студенческой молодежи является нерациональным, несбалансированным по липидному компоненту и создает условия для формирования заболеваний с алиментарными факторами риска. Традиционные показатели пищевого статуса (индекс массы тела, объем талии/объем бедер) при этом находятся в границах нормальных величин, однако состав тела под воздействием избытка животных жиров при недостатке эссенциальных полиненасыщенных жирных кислот меняется, что можно диагностировать при помощи метода биоимпедансометрии. Установлены корреляционные связи параметров потребления липидов пищи и показателей пищевого статуса у лиц молодого возраста.
