Характеристика состава туши и её естественно-анатомических частей по морфологическим признакам тёлок разных генотипов

Abstract

The materials describing morphological composition of the carcass and its natural anatomical parts obtained from the slaughter of Hereford and Simmental heifers of different genotypes at the age of 21 months are submitted in the article. The importance of studies on beef performance of steers, as well as of the mother population as an additional contingent of slaughter cattle, has been substantiated. The detailed picture of the overall morphological composition of half-carcasses of animals by such parameters as flesh, bones, cartilages and tendons is presented. Moreover, the advantages of animals, with the blood share of German and Canadian Simmentals, by the absolute indices of the amount of flesh, bones, cartilages and tendons and the relative flesh weight (especially with the share of blood of Canadian Simmentals), are confirmed on the basis of accuracy of the indices difference. The indices of carcass meatiness, according to which the animals with the blood share of imported Simmentals are inferior only to Herefords, are suggested. The relationship of some natural anatomical parts in a half carcass, in terms of the genotypes under study, i.e. flesh, bones and tendons, both in the absolute and relative expression, is shown. The advantages of animals, with a share of blood of imported Simmentals, by the absolute and in-parts weight of the jugular and hip parts over the Simmental and Hereford beef animals are pointed out. The animals with the blood share of Canadian selection by all the natural anatomical parts, except for the jugular part, were second by the share of flesh in the butt, which indicates the meat quality of animals of this genotype.

В статье представлены материалы, характеризующие морфологический состав туши и её естественно-анатомических частей, полученных от убоя 21-месячных тёлок герефордской и симментальской пород различных генотипов. Обоснована важность изучения мясной продуктивности не только бычков, но и как дополнительного контингента убойного скота маточного поголовья. Дана развёрнутая картина общего морфологического состава полутуши животных по таким показателям, как мякоть, кости, хрящи и сухожилия. При этом на основе подсчёта достоверности разницы в показателях признаётся преимущество животных с долей крови немецких и канадских симменталов по общей массе полутуши, абсолютным показателям количества мякоти, костей, хрящей и сухожилий и относительной массе мякоти (особенно с долей крови канадских симменталов). Приведены индексы мясности туши, по которым животные с долей крови импортных симменталов уступают только герефордам. Показано соотношение отдельных естественно-анатомических частей в полутуше в разрезе изучаемых генотипов, с раскладом состава естественных частей на мякоть, кости и сухожилия как в абсолютном, так и относительном выражении. Отмечено преимущество животных с долей крови импортных симменталов по абсолютной и долевой массе шейной и тазобедренной частей над животными мясной селекции симментальской и герефордской пород. Животные с долей крови канадской селекции по всем естественно-анатомическим частям, за исключением шейного, имели второй результат по доле мякоти в отрубе, что указывает на мясные качества животных этого генотипа.
