Abstract

Для контроля безопасности продуктов питанияживотного происхождения необходима научно-обоснованная оценка качества мяса и молока. В статье представлены сравнительные результаты ветеринарно-санитарной экспертизы мясного и молочного сырья, полученного от крупного рогатого скота РИД-отрицательного (контроль), инфицированного ВЛКРС и животных больныхв гематологической стадии инфекционного процесса. Исследования проводили в сельскохозяйственных предприятиях Ханты-мансийского автономного округа Югра. Для изучения качественных показателей, пищевой ценности и бактериологической оценки мяса и молока использовали общепринятые методики. По органолептическим показателям мясо животных убитых в гематологической стадии болезни значительно отклоняется от нормативных параметров (эластичность, время выравнивания ямки, цвет мышечной ткани, мутный бульон кисловатого и неприятного запаха). У 87 % исследованных туш слабовыраженная корочка подсыхания. Доля влаги в пробах мяса животных в гематологической стадии лейкоза в 1,5 раза выше, чем в контроле. Наблюдается тенденция куменьшению Достижения науки и техники АПК, №10-2013 _ калорийности мяса полученного от гембольныхживотных, относительно РИД-отрицательных, на 32,3 %, а от инфицированных, на 15,6%. Наибольшая микробная обсемененность мышечной ткани и внутренних органов отмечена у гематологически больныхживотных (сальмонеллами в 2раза, протеем в 2,7 раза, стафилококками в 3,9 раза выше, чем в контролем). Качество мяса, полученное от убоя животных в гематологической стадии лейкоза крупного рогатого скота соответствует не свежему. При исследовании молока существенные изменения наблюдали только у гематологически больных лейкозом коров по степени бактериальной обсемененности (пре-вышает 500.1000 тыс./см 3).

Improving the quality of care, and food and biological value of food, its safety for humans are of great social importance. To monitoring the safety of products of animal origin requires science-based assessment ofthe quality of meat and milk. The article presents a comparison ofthe results of veterinary-sanitary examination of meat and dairy raw materials obtained from cattle RIDnegative infected with BLV and hematologic stage of infection. Investigations were carried out in the agricultural enterprises of KhantyMansi autonomic region Yugra. To study the quality indicators, nutritional value and bacteriological assessment of meat and milk using conventional techniques. We found that the organoleptic meat of animals killed in the hematology -stage disease has significant deviations from normal values (elasticity, while aligning holes, the color of muscle tissue, muddy soup sour and unpleasant odor). The examined carcasses (87 %) slightly crust dries. The amount of moisture in samples of animal meat hematological step leukemia 1,5 times the control. There is a tendency to reduce the calorie content of meat derived from animals gembolnyh respectively, by 15,6% 32,3 % compared to RID negative and infected animals. The highest colonization muscle and internal organs was higher in patients hematologically animals (in 2 times Salmonella, Proteus 2,7 times, staphylococci 3,9) compared to the control. Thus, the results of comprehensive studies, it was concluded that the meat obtained from slaughter in hematologic stage bovine leukemia corresponds not fresh. In the study of milk significant changes were observed only in hematological patients with leukemia cows on the degree of bacterial contamination (more than 500-1000 th. /om 3).
