Abstract

La 16° édition de la Journée Scientifique Vigne & Vin se déroulera jeudi 22 mai 2025 sur le campus de la Gaillarde à l’Institut Agro Montpellier. Cette manifestation est organisée dans la dynamique de la communauté scientifique de Montpellier Vine & Wine Sciences, par l’Institut Agro Montpellier, INRAE, l'Université de Montpellier et la chaire d’entreprises vigne et vin.Les Journées Scientifiques Vigne & Vin sont destinées aux professionnels de la filière vitivinicole attentifs aux avancées de la recherche et aux innovations auxquelles elles peuvent conduire. Elles ont pour objectif de permettre une veille technologique sur un large éventail de problématiques viticoles, œnologiques et économiques.Cette année, la thématique proposée est « Les communautés microbiennes en œnologie, de la parcelle à la cave », et propose une approche pluridisciplinaire de ces questions avec des présentations de démarches développées en viticulture ainsi qu’en œnologie. Les connaissances présentées permettent de mieux comprendre les mécanismes régissant les interactions entre le microbiote et son environnement, que ce soit dans le sol, sur les feuilles de vigne, sur les baies de raisin ou pendant la vinification. Elles nourrissent la réflexion autour de pratiques comme la bioprotection ou l'utilisation de levures indigènes. Il s'agit de tirer le meilleur potentiel de la biodiversité microbienne tout au long de la chaine d'élaboration du vin.
