Abstract

<p align="justify"> A deï¬ciência de ferro é a carência nutricional mais comum no mundo. Para preveni-la, a fortiï¬ cação de alimentos com ferro tem sido recomendada. Contudo, é preciso conhecer as características dos ingredientes que compõem o alimento, veriï¬ car a presença de inibidores da absorção de ferro e as propriedades dos compostos de ferro disponíveis. O presente trabalho teve por objetivo elaborar barras de cereais fortiï¬ cadas com ferro e estudar suas características físico-químicas e nutricionais. Foi elaborada uma barra de cereal, sem adição de ferro e, a partir desta, foram elaboradas oito formulações utilizando sódio ferro etileno diamino tetracético (NaFeEDTA) e ferro bisglicina quelato, na concentração de 45% ou 60% da IDR para adultos, na calda ou na cobertura de chocolate. Foram realizadas análises de pH, atividade de água, umidade, cinzas, proteínas, lipídios, ï¬ bra alimentar solúvel e insolúvel, minerais, ácido fítico, compostos fenólicos e diálise de ferro in vitro. A formulação ï¬ nal apresentou alto teor de ï¬bras (6,01%), alto teor de ferro (74% da IDR) e estimativa da disponibilidade de ferro in vivo (16,67%) comparada a do ferro-heme (10% a 30%). </p>
