[EN]: Insects are considered a central piece of circular economy and sustainability, and they play pivotal a role in the industry of bio-remediation and in the feed and food sector. In the EU, the use of insects as foods is regulated by the Novel Foods Regulation (EU Reg. No 2015/2283). To date, 14 applications with seven different insect species are under scrutiny by the EU institutions for marketing purposes. The aim of this work will be to assess the nutritional potential of selected insect foodstuff used as food ingredients, paying a special focus on the carbohydrate and protein fractions. This work aims to provide some understanding of the nutritional potential of these novel food/food ingredients, as well as of their digestibility and safety in a global comprehensive way.
[ES]: Los insectos son considerados una pieza central para la sostenibilidad, y juegan un importante papel en la industria de la bio-remediación y el sector alimentario. En la UE, el uso de insectos como alimento está regulado por la Novel Foods Regulation (EU Reg. No 2015/2283). Hasta la fecha, 14 solicitudes con 7 especies de insectos diferentes están siendo estudiadas por las instituciones de la UE. El objetivo de este trabajo será establecer el potencial nutricional de una selección de alimentos basados en insectos usados como ingredientes, poniendo especial interés en las fracciones de carbohidratos y de proteínas. Este trabajo tiene el objetivo de aumentar el conocimiento sobre el potencial nutricional de estas novel foods, así como sobre su digestibilidad y seguridad.
