El tostado artesanal de café en México

Abstract

El enfoque del análisis regional adoptado por el Centro de Investigación para el Desarrollo de las Regiones Cafetaleras de la Universidad Autónoma Chapingo permite comprender la compleja problemática de las zonas cafetaleras desde un punto de vista holístico. Ante el alto grado de intermediarismo, bajos precios, falta de gobernanza del sector y políticas que desestimulan la producción a pequeña escala de café, el tostado artesanal de los granos forma parte de una estrategia clave de resiliencia que han implementado los cafeticultores ante el abandono del Estado a esta importante actividad en las regiones más apartadas de México y que se desarrolla principalmente por grupos de mujeres indígenas. En este libro se narra la experiencia de las artesanas, la forma en que realizan el proceso, técnicas, herramientas y déficits que presentan al desarrollar este importante trabajo. Además, el objetivo es visibilizar y valorizar esta actividad ancestral realizada por las campesinas. Desde el punto de vista técnico permite coadyuvar a mejorar el proceso que realizan las mujeres indígenas, al mismo tiempo fomentar la inclusión social y económica a través de un enfoque integral y equitativo en el ámbito del intercambio de saberes entre la Universidad y las comunidades, resaltando la necesidad de reconocimiento y apoyo institucional para promover la resiliencia económica y la sostenibilidad de la cafeticultura artesanal en México.
