Abstract

Esta investigación tuvo como objetivo elaborar y caracterizar un bioplástico a partir de cáscara de yuca para la envoltura de alimentos, evaluando sus propiedades físico-mecánicas y su biodegradabilidad. El estudio empleó un diseño experimental con enfoque cuantitativo y se desarrolló en dos fases. En la primera fase, se optimizó la extracción del almidón mediante un diseño factorial 2², evaluando dos niveles de velocidad (6 800 y 20 000 rpm) y tiempo de licuado (45 y 60s). En la segunda fase, se formuló el bioplástico utilizando un segundo diseño factorial 2², variando las concentraciones de almidón (2 y 3 g) y glicerina (0,5 y 1,0 mL). Se caracterizaron las propiedades fisicoquímicas, mecánicas y de biodegradabilidad del material resultante, así como su eficacia en la conservación de alimentos. Los resultados indicaron que el mayor rendimiento de almidón (17,58 %) se obtuvo a una velocidad de 20 000 rpm y un tiempo de 60s. La formulación que combinó 3 g de almidón con 0,5 mL de glicerina presentó las mejores propiedades mecánicas, destacándose una elongación del 64,59 %. Además, se demostró que el material obtenido exhibió una excelente biodegradabilidad, con una degradación del 100 % en medio acuoso y del 54,5 % en suelo tras 28 días. El bioplástico elaborado a partir de cáscara de yuca mostró eficacia en la conservación de alimentos, al mantener la calidad de una frutilla durante siete días. Esto confirma su viabilidad como material sostenible y permite establecer parámetros óptimos para su producción, posicionándolo como un posible sustituto ecológico del plástico convencional.
