Penghasilan Snek dari Kulit Durian: King's Yan Cracker

Abstract

Kajian ini dijalankan bagi menghasilkan produk inovasi iaitu keropok King Yan Cracker dari kulit durian. Durian merupakan salah satu buah-buahan tropika bermusim yang ditanam secara meluas di Asia Tenggara seperti Malaysia, Indonesia dan Thailand. Buah durian telah diberi gelaran sebagai ‘King of Fruits’ iaitu Raja Buah-buahan kerana mempunyai aroma dan rasa yang unik. Kulit durian boleh dilihat sebagai penyumbang utama bagi sisa pertanian dengan peningkatan jumlah setiap tahun dan telah memberi masalah kepada alam sekitar kerana jumlah sisa durian yang dihasilkan di Malaysia telah mencecah 480 000 tan metrik setiap tahun. Kulit durian mengandungi pelbagai nutrien iaitu protein, lemak, serat dan karbohidrat. Ia juga mengandungi vitamin dan mineral seperti vitamin A, vitamin C, vitamin B6, asid folik, tiamin, riboflavin, niasin, kalsium, kalium, besi, natrium, magnesium, fosforus, dan zink. Objektif kajian ini adalah untuk menghasilkan snek berasaskan kulit durian, mengenal pasti kandungan nutrisi dan tahap penerimaan responden terhadap produk keropok King Yan Cracker. Metodologi kajian ini bermula dengan pembangunan resepi standard iaitu dengan mengenal pasti bahan, peralatan dan langkah penyediaan bagi menghasilkan produk snek yang berasaskan kulit durian. Penghantaran sampel ke Makmal Pengujian Makanan untuk kandungan nutrisi produk. Kaedah pengumpulan data menggunakan kaedah kuantitatif iaitu soal selidik sebagai instrument. Soal selidik dijalankan secara digital iaitu dengan menggunakan Google Form. Seramai 100 orang penduduk di sekitar Sungai Abong, Muar adalah responden bagi mendapatkan data berkaitan produk snek dari kulit durian. Analisa data diperolehi dari data responden dari Google Form. Data tersebut diterjemahkan ke dalam bentuk Carta Pai dan Carta Bar dan dihuraikan. Dapatan menunjukkan 90% responden bersetuju King Yan Cracker boleh dipasarkan. 10% tidak pasti snek ini boleh dipasarkan. Secara keseluruhannya snek dari kulit durian King Yan Cracker dapat dihasilkan melalui pembangunan resepi standard. Penambahbaikan dari aspek rupa boleh dilaksanakan pada kajian akan datang dengan mengaplikasi penggunaan teknologi bagi meningkatkan kualiti produk King Yan Cracker di masa hadapan.
