Abstract

Almennt eru varnarefni notuð í því skyni að stuðla að árangursríkari framleiðslu ávaxta og grænmetis en geta þó verið mjög skaðleg heilsu fólks og umhverfinu. Markmið verkefnisins var að skima afurðir á íslenskum markaði fyrir varnarefnaleifum, bera saman mælt magn í innfluttum og íslenskum afurðum og að kanna hvort munur væri á styrk varnarleifa, þungmálma og næringarefna í ytra byrði/hýði ávaxta og grænmetis í samanburði við innra byrði/aldinkjöti þess. 166 sýni (ávextir, ber, grænmeti, salat, kryddjurtir og kornvörur) af íslenskum (42%) og innfluttum afurðum (58%) voru skimuð fyrir varnarefnaleifum. Í framhaldinu var mældur styrkur varnarefna, næringarefna og þungmálma í hýði og innra byrði afurða (n=44). Niðurstöðurnar voru að 49% afurða á íslenskum markaði innihéldu varnarefnaleifar, 61% innfluttra afurða og 31% íslenskra afurða. Hins vegar var styrkur þeirra í sýnum að jafnaði lágur og innan leyfilegra hámarksgilda í 94% sýna. Færri tegundir varnarefna fundust í íslensku grænmeti en í innfluttu grænmeti. Hærri styrkur varnarefnaleifa og þungmálma var í hýði ávaxta og grænmetis í samanburði við innihaldið. Þá reyndist hýði grænmetis trefjaríkara en innihaldið. Að auki var íslenskt grænmeti ríkara af stein-og snefilefnum en innflutt grænmeti. _____ Pesticides are commonly used to promote a more effective cultivation of fruit and vegetables, although possibly causing serious harm to human health and the environment. The aim of the project was to screen products in the Icelandic market for pesticide residues, to compare measured levels in imported and Icelandic produce, and to examine whether there were differences in the levels of pesticide residues, heavy metals, and nutrients in the exterior/peel of fruit and vegetables compared to its interior/pulp. 166 samples (fruits, berries, vegetables, lettuce, herbs, and cereals) of Icelandic (42%) and imported products (58%) were screened for pesticide residues. Subsequently, concentrations of pesticides, nutrients and heavy metals were measured in the outer and inner layers of products (n=44). The results were that 49% of products on the Icelandic market contained pesticide residues, 61% of imported products and 31% of Icelandic products. However, their levels were generally low and below the Maximum Residue Levels in 94% of samples. Fewer types of pesticide residue compounds were found in Icelandic vegetables compared to imported vegetables. Higher concentrations of pesticide residues and heavy metals were present in fruit and vegetable peel compared to the pulp. The peel of vegetables turned out to be more fibrous than the pulp. In addition, Icelandic vegetables were richer in minerals and trace elements than imported vegetables.
