Abstract

Sharbatlarning kimyoviy tarkibini saqlash ob’ekti sifatida, umumiy va faol kislotalilik va ularning tabiatini o‘rganish. Komponentlarning miqdoriy tarkibini aniqlash. Mevalarni sharbatlar va konsentratlarga qayta ishlash texnologiyasini tadqiq qilish xom ashyo va tayyor mahsulotlarning kimyoviy tarkibini qayta ishlash bosqichlarini o‘rganish, sharbatlar tarkibini aniqlash metodikasini tayyorlash eksperimental modellar yordamida “Meva sharbatlari” konservalarini ishlab chiqarish texnologiyasini o‘rganish va tadqiq etish, sharbatlar va konsentratlardagi umumiy kislotalikni aniqlash xom sharbatlarni fermentatsiyalashda hosil bo‘ladigan radikallarni, vitaminlar miqdorini aniqlash sharbatni qayta ishlash sanoati uchun tavsiyalar ishlab chiqish va berishni amalga oshirishdan texnik-iqtisodiy samaradorlikni hisoblash.
