Abstract

Konserve balık, dünya genelinde yaygın olarak üretimi yapılan su ürünlerinin başında gelmektedir. Üreticiler ve tüketiciler açısından konserve balıkların satın alınmasında kalitesi ve besin değeri önem arz etmektedir. Özellikle raf ömrünün uzunluğu ve günümüz yoğun iş temposunda çalışan insanların kolay beslenme hedefleri nedeni konserve balık tüketimi tercih edilmektedir. Çalışmanın amacı, kutu balık konservelerinin üretim aşamalarında oluşan gıda yönlü besin değerlerinin kaybının nasıl olduğunun ortaya konulmasıdır. Ayrıca, konserve balıkların depolama süresi boyunca kalite parametrelerinde meydana gelen değişiklikler ortaya konulmaktadır. Balık konservelerindeki kalite kayıplarının nasıl en aza indirilebileceği konusunda çözüm önerileri sunulmaktadır. Konserve üretimi sırasında, temel besin öğelerinin kaybı, istenmeyen bileşiklerin oluşumu, esmerleşme, lipid ve protein hasarı gibi konserve ürünlerin raf ömrünü etkileyebilecek değişiklikler olmaktadır. Çalışmada konserve balıkların üretimi sırasında meydana gelen mikrobiyal, fiziksel ve kimyasal bozulma sebepleri ortaya konmuştur.
