Évaluation de la valeur nutritionnelle des aliments sauvages traditionnels (Règne Animalia) intervenant dans la sécurité alimentaire des communautés rurales du Sud-Kivu (République Démocratique du Congo)

Abstract

Notre recherche se propose d’évaluer la valeur nutritionnelle des aliments sauvages traditionnelsi mpliqués dans la sécurité alimentaire des communautés rurales de la province du Sud-Kivu en R.D. Congo. L’étude a été menée dans cinq territoires du Sud-Kivu, auprès de trois groupes ethniques (Bashi, Barega et Bafuliro) dominants dans la province. Si des plantes et des champignons ont été signalés, le présent article prend uniquement en considération les produits du Règne Animalia. Quatorze produits majeurs ont retenus notre attention, dont neuf espèces d’insectes relevant de quatre ordres. L’ordre des lépidoptères (Saturniidae) est le plus important, avec trois chenilles très appréciées. Trois orthoptères, deux rongeurs (le rat de Gambie et le rattaupe argenté) ainsi que deux coléoptères (la foreuse du stipe et l’orycte du cocotier) s’avèrent également fort intéressants. Mollusques, termites, grenouilles et crabes complètent cet éventail. Des résultats des analyses chimiques les concernant sont présentés. La discussion passe en revue toute l’information existante concernant ces espèces, s’appuyant sur une documentation bibliographique pertinente. Dans l’ensemble, ces aliments sont, pour les populations locales, une source importante de protéines, de lipides, de vitamines et de sels minéraux. Ces produits forestiers non ligneux trouvent une place non négligeable dans la sécurité alimentaire des populations. Elles méritent et justifient une attention plus grande de toute la communauté afin de garantir leur gestion durable et de mieux participer à réduire la malnutrition de la population. Six recommandations sont émises.
