LA NUTRIESCUELA UNA HERRAMIENTA DE MERCADEO SOCIAL EN LA COMUNIDAD RAFAEL CALDERA, MUNICIPIO VALERA, TRUJILLO – VENEZUELA

Abstract

La educación nutricional juega un papel primordial en la promoción de hábitos adecuados para practicar una alimentación sana, suficiente y equilibrada. Se han realizado muchos esfuerzos que no han dado resultados positivos. De hecho, el mercadeo social, ofrece la combinación de los mejores elementos para los planteamientos tradicionales de cambio social, planificación integrada y un marco de acción, basado en los avances de la tecnología comunicacional y en las habilidades propias del mismo. Con este propósito se realizó el estudio fundamentado en una investigación cualitativa, modalidad investigación - acción en la comunidad Rafael Caldera, Valera, estado Trujillo. Se tomó una muestra intencional (34 manipuladores de alimentos y 6 representantes de grupos focalés.) Se caracterizó la comunidad mediante socioindicadores y diagnóstico participativo de grupos focales. En una jornada clínica diagnóstica se aplicaron dos encuestas mixtas validadas por especialistas: tipo historia médica y manipulación inocua de los alimentos (conocimientos, aptitudes y prácticas), además de evaluación clínica y nutricional, presión arterial, pulso y glicemia capilar. Las normas de higiene que aplican los grupos estudiados se evaluaron con observación participativa y registros tecnológicos, para luego capacitar con talleres correctivos. En todas las actividades se consideraron los principios básicos de bioética (consentimiento informado). Se realizó triangulación de resultados para proponer “La Nutriescuela” como plan de mercadeo social, que culminó con un festival gastronómico, donde además de valorar los conocimientos adquiridos, se expusieron productos preparados y una obra teatral, demostrando una efectiva interacción en red para la ejecución y aceptación de la propuesta.
