Se obtuvo un modelo con la solución analítica de las ecuaciones cinéticas para la glucovainilla y vainillina en función del tiempo. Se realizaron siete tratamientos de marchitamiento a las vainas (horneado: 10 h a 60 °C, escaldado con vapor: 15 s a 100 °C y ultrasonido: 3, 6 y 20 min, 90 y 180 W), se llevó cabo el beneficio y se compararon los tratamientos por intervalos conjuntos de 95 % de confianza. Se determinaron los parámetros cinéticos óptimos (kGV, kV y k2) para obtener el modelo para cada tratamiento. Se obtuvo como mejor tratamiento el escaldado con vapor, obteniendo una alta concentración de vainillina al final del beneficio.
