Abstract

El cultivo de setas del género Pleurotus spp. ha incentivado nuevas posibilidades de comercialización a través de nuevos productos, una de ellas son las setas deshidratadas. En el presente trabajo se validó el proceso de deshidratación y rehidratación para la preservación de este tipo de setas, en vista de que es un producto que posee una vida útil muy corta. Es por ello que se planteó la elaboración de un procedimiento preliminar para el deshidratado y rehidratado del Pleurotus ostreatus. Para complementar el objetivo propuesto, se efectuó una investigación experimental para la cual se utilizó la cepa CCEBI 3024 Pleurotus ostreatus var. Florida y el sustrato cascarilla de arroz hidrolizada. El estudio reveló que la deshidratación a 40 °C no ocasiona graves daños en el Pleurotus ostreatus posibilitando una mejor rehidratación, mientras que el secado a 50-60 °C causó cambios no deseados en sus características organolépticas. La cinética de secado del Pleurotus ostreatus referenció la presencia de un pequeño período de deshidratación a una velocidad constante en el transcurso del proceso, siendo la temperatura y el tiempo los parámetros estudiados.
