Abstract

La producci��n mundial de las setas comestibles y entre ellas el Pleurotus spp. se ha incrementado notablemente en los ��ltimos a��os como muy pocos alimentos pueden hacerlo en tan corto tiempo. Esta investigaci��n se efectu�� en la provincia de Camag��ey en el per��odo comprendido entre septiembre y junio del 2019-2020. Se realiz�� una selecci��n de esta seta comestible para determinar, seg��n sus caracter��sticas cu��l o cu��les de las especies de este g��nero tienen mayor adaptabilidad en el municipio camag��eyano. Se toma como referencia el sustrato lignocelul��sico c��scara de arroz, que aun cuando no es el m��s eficiente para el cultivo de la seta atendiendo a su aporte nutricional si resulta el m��s accesible. Los par��metros evaluantes son la temperatura y la humedad relativa, as�� como la composici��n bromatol��gica y fitoqu��mica de varias de estas especies. Para el dise��o y desarrollo de la investigaci��n se realizaron b��squedas en diferentes p��ginas de internet como Google, Scholargoogle, Scielo y Ebsco. Adem��s se realizaron visitas al centro Meteorol��gico de la provincia de Camag��ey y entrevistas a los trabajadores del mismo. El presente estudio revel�� seg��n las estad��sticas y la revisi��n de la literatura que las setas de g��nero Pleurotus ssp. con mayor adaptabilidad en el municipio camag��eyano son Pleurotus ostreatus, Pleurotus pulmonarius y Pleurotus djamor, dejando como recomendaci��n el estudio posterior de la seta Pleurotus sajor- caju.
