Harinas y almidones de granos, raíces, tubérculos y bananas en el desarrollo de productos tradicionales y para regímenes especiales

Abstract

Venezuela produce rubros potenciales para elaborar harinas; tales como, granos, raíces, tubérculos y bananos; sin embargo, el trigo, cereal importado, es la fuente de harina para la elaboración de los productos farináceos más consumidos en el país. Darle valor agregado a estos rubros, produciendo harinas o almidones para el desarrollo de nuevos productos, evitaría pérdidas poscosecha, y esto permitiría un mercadeo estable y permanente de los mismos e incentivaría la seguridad alimentaria. Los consumidores con regímenes especiales deben adquirir sus alimentos por importación, estos son poco variados, no-tradicionales, escasos y costosos. El objetivo de la investigación fue mostrar la factibilidad de elaborar alimentos para consumidores tradicionales y con regímenes especiales usando insumos nacionales. Se elaboraron y caracterizaron en sus propiedades de calidad harinas y almidones, siguiendo metodologías diseñadas en Venezuela. A partir de estas harinas y almidones, y sus combinaciones, se elaboraron productos como bebidas, colados tipo sopas y de frutas, pastas, panes, ponqués y bases para elaborar tortas, panquecas y pizza. Cada uno de estos productos fue evaluado en sus propiedades funcionales, sensoriales y nutricionales siguiendo metodologías oficiales. Los resultados indican la potencialidad de elaborar y escalar a nivel industrial estos alimentos con altos contenidos de nutrientes.
