Abstract

The present report constitutes deliverable D2.2, which summarises the outcomes of the tracking surveys of the microbiological and physicochemical parameters of raw materials, intermediate and final products as well as the environmental data from processing facilities producing the artisanal products addressed in the ArtiSaneFood project.
