Abstract

Anisakis spp. são parasitas marinhos, responsáveis pela zoonose denominada anisaquíase. Em função da internacionalização dos hábitos alimentares, esta revisão avaliou a segurança alimentar do pescado, consumido cru ou mal cozido, na perspectiva da ocorrência de Anisakis spp. Para discorrer o tema, foram selecionados artigos a partir de bases de dados como Web of Science. Nos últimos anos, houve aumento do número de espécies parasitadas por Anisakis spp. Além disso, também houve aumento progressivo da anisaquíase, o que pode relacionar-se com a globalização da culinária a base de pescado sem a devida cocção como sushi e ceviche. Dado a alta frequência de larvas Anisakis spp., encontradas em pescado de valor comercial, evidencia-se a necessidade de mudanças nas metodologias de detecção dos parasitas, bem como programas voltados ao gerenciamento de riscos de infecções. Porém, apesar dos riscos, o consumo de receitas à base de pescado cru ou mal cozido é seguro, desde que se atente às medidas profiláticas, como certificar-se que o produto passou por processo de inativação de larvas Anisakis spp.
