Abstract

Résumé Cet article porte sur la commercialisation des champignons comestibles au Cameroun. L’objectif de la présente étude est d’analyser les facteurs pouvant aboutir à une plus grande satisfaction des clients potentiels et réels du marché des champignons comestibles sur le territoire Camerounais et au-delà. L’étude a permis de collecter les informations (qualitatives et quantitatives) auprès de 42 producteurs/ramasseurs, 68 distributeurs (grossistes, semi-grossistes et détaillants) et 85 consommateurs de champignons comestibles, dans les Départements du Mfoundi et de la Lékié pour la Région du Centre, dans les Départements du Noun, de la Mifi, des Hauts Plateaux et de la Menoua pour la Région de l’Ouest, et dans le Département du Wouri pour la Région du Littoral. Les logiciels SPSS version 17.0 et Microsoft Excel 2010, ont permis d’analyser les données au moyen de la statistique descriptive et d’un test de comparaison des moyennes. Les résultats de l’étude montrent que plusieurs espèces de champignons comestibles sont commercialisées sur le territoire national sous les formes fraîches, sèches et en conserve. Il s’agit du : champignon de Paris (Agaricus bisporus spp.) 39%, champignon de Termitière (Termitomyces spp.) 11%, champignon des Pleurotes (Pleurotus spp.) 15% et les Truffes (Elaphomyces granulatus) 35% selon les informations obtenus auprès des personnes enquêtées. Les résultats de l’étude montrent également que la distribution des produits se fait dans les grandes surfaces telles que les supermarchés, les boutiques et les marchés pour les champignons comestibles et auprès des producteurs de champignons comestibles pour le Blanc. Par contre, la consommation régulière des champignons comestibles sous toutes ses formes, est effective dans les hôtels, les restaurants et quelques ménages. Les résultats montrent que les producteurs/transformateurs réalisent une marge bénéficiaire de 780 FCFA/Kg de champignon frais produit, supérieur à celle des grossistes 500 FCFA/Kg et des détaillants 580 FCFA/Kg de champignon frais vendu. Il existe une différence de moyennes de marges brutes entre les producteurs/transformateurs, les grossistes/semi-grossistes et les détaillants, a un seuil de signification de 1%.
