Perfiles dinámicos de enfriamiento para la cristalización de estevia (Rebaudiósido A) mediante instrumentos virtuales

Abstract

Se experimentó en un cristalizador por lotes de vidrio de borosilicato, para inducir la nucleación y determinar la temperatura y concentración mediante adquisición de imágenes. Se diseñó una interfaz gráfica en LabVIEW 2017 que trabaja en conjunto con las funciones del módulo de comunicaciones de NI-Visa y la paquetería de funciones de JULABO para la automatización y control del cristalizador. Se incluyó una interfaz de perfil de temperatura la cual recibe y almacena datos de temperatura del interior del cristalizador, del agua que circula por la chaqueta y del baño térmico. Igualmente se realizaron los balances de materia y energía para la obtención de perfiles de temperatura para la cristalización de la mezcla Rebaudiósido A-Agua-Etanol.
